Liberty Village Dry Cider

Initially, Liberty Village started off as a project to create a semi-sweet dry cider. We wanted something that was local, sessionable, and delicious. We saw a market for fermented beverages, cider specifically. We had our cidery, Pommies at the time, trial a few variations using different blends of apples as well as various yeasts. Recognizing the gap in the market for sugar-free cider, we insisted on tasting our initial samples with the base fermented to 0g of sugar with nothing added. We were told it would taste terrible... but we loved it. We brought samples back and ran further consumer discovery on it - people loved it as well. When we brought the news back to our production team, they told us we were crazy. Multiple industry professionals told us it would never sell. Sticking to our gut, we launched Canada's first sugar and sweetener free cider, which has since proven to be a smashing success.
